Lisa Attempts.. A Rhubarb Buckle

~ Attempting to bake a Rhubarb Buckle ~
 I'll 100% admit I'm no Nigella in the kitchen (to be honest I'm barely GCSE standard but I'm working on it!) Baking or even cooking has never been a strong point of mine, but every now and again I fancy actually making something. So, low and behold, I attempted this whole 'baking a cake' malarkey AND IT DIDN'T GO TOO WRONG EITHER! I attempted a 'Rhubarb Buckle', following a step-by-step recipe from the BBC Good Food website and (if you scroll down to the bottom of this post) you can see that it may have turned out to look like the most disgusting cake ever made - but it really tasted quite nice.. don't judge a book as they say... 

My Shopping List:
Pain Flour
Golden Caster Sugar
Unsalted Butter
2 Tins of Rhubarb
1 Oranges
2 Eggs
Baking Powder
Vanilla Bean Paste
1 Pot of Sour Cream
The technique is borderline parallel to the recipe on the bbc website, so I don't need to repeat what's on there. I will though simply add my opinion and what minor changes I did make.
It was on the list to add ginger to the crumble topping, this I left out and to be honest didn't make much difference, I didn't feel like anything was missing - I hate ginger so was glad it didn't alter anything not including it! Something I would do if I were to make this again would be not adding in the orange zest - for me it was too much and removed any taste of rhubarb. In its replacement, I would add more of the vanilla bean paste, this again, had no taste once the cake was finished - such a shame. To look at, the cake burnt slightly at the top, this being down to our oven more than anything because ~according to my mum~ its on its way out, so this could not be helped. But, as I said earlier you should never judge a book by its cover, should you!
Overall, for a novice baker like, this cake was completely doable and wasn't too bad a'tasting - I gave some pieces to some of my family (mainly my grandma obviously!) and they all loved it! I would definitely attempt this again, but with the odd tweak, this hasn't scared me out of the kitchen but to be honest is all too much of a faff for me - its OK once in a while but its quite exhausting all the effort for one cake haha! 


  1. Rhubarb is quite difficult to cook with, like you said, it can caramelize/cook/burn quite easily! This looks yummy (and like you said, sometimes things taste better than they look!) and such a lovely cosy dessert for winter! xx

    1. I've never cooked with rhubarb so didn't realised it burnt so easily! I now definitely know for next time! xx
