When it is gloomy outside and you have the day off work (oh and it is Friday may I add), what is thee best breakfast you can make yourself? PANCAKES. Having bought an actual, real life cookbook a few weeks ago, I've told myself I need to start knowing how to cook things properly and that I have done. Of course, pancakes are the easiest things to make. I have known how to cook them since I was about 5. But, I wanted to learn how tp make them healthier, what toppings work best.. how to make the most of them. So, from the book Eat Beautiful (which is thee most amazingly extra book I own) I made Kiwi Pancakes, using healthier ingredients and tasty toppings..

Ingredients for the Pancakes:
Approx. 8 Tbsp. Gluten Free Plain Flour
2 Eggs
150ml Soya Milk
150ml Water
Olive Oil (for frying the pancakes)
I started by adding the flour and 2 eggs into a bowl. Whilst mixing together, slowly adding in the milk and then the water. Mix until the mixture is smooth and heat up a frying pan. Add a little olive oil to the pan and add the batter until the it reaches the edges. Fry on both sides until golden brown and voila! Add a couple of big spoon fulls of Greek yogurt, cut up the two kiwi fruits and sprinkles over the pomegranate seeds; you are then blessed with the tastiest of breakfasts!
Ingredients for the Topping:
Greek Yoghurt
Pomegranate Seeds
2 Kiwi Fruits
Having adapted this recipe from 'Eat Beautiful' by Wendy Rowe, I tried to keep the key ingredients in and remove some I do not like. For instants, she says to use Almond Milk, but I honestly can't stomach almonds HA! Within the book, the author explains key ingredients and how good they are for the body. For instance, Pomegranates are described as 'The Elixir of Youth', due to them being packed full of Vitamin C. Kiwi Fruit is described as 'The Skin Brightener', due to them being a powerful antioxidant and again full of Vitamin C. Finally, there is Greek Yoghurt, which is said to  probiotic-rich, this being good for your stomach!
So there we are, I attempted a little health take on Pancakes - I have to say they were incredibly taste, they tasted as good as they look!
